This is an easy and refreshing sorbet that’s perfect served as it is or with a slice of cheesecake or tropical fruits. Blackcurrant puree is used for making cocktails and can be easily found online or in the drinks section of supermarkets.

  1. 300ml blackcurrant puree
  2. 100g caster sugar
  3. 100ml water
  4. 65ml creme de cassis
  5. 1 lemon, halved
Instructions
  1. This is an easy and refreshing sorbet that's perfect served as it is or with a slice of cheesecake or tropical fruits. Blackcurrant puree is used for making cocktails and can be easily found online or in the drinks section of supermarkets.
  2. Pour the sugar and water into a saucepan and bring to the boil over a high heat. When the liquid goes from cloudy to clear remove from the heat and pour into a bowl, allow to cool.
  3. Add the cassis and blackcurrant puree to the syrup and stir to combine. Add a squeeze of lemon juice to taste. Cover the bowl with cling film and leave in the fridge to chill until cold.
  4. Pour the mixture into an ice cream machine and churn according to manufacturer's instructions. Decant the sorbet into an airtight container and store in the freezer.
