Roast Beef with Vegetables

Sunday roast one-pot style could just be the future. Here a 28 day matured topside joint is simply seared in a hot pan and roasted on a bed of vegetables, effectively doing two jobs in one. All that’s left is to throw in some good red wine for an incredible gravy for the most stress-free Sunday roast you’ll ever make.

Ingredients
  1. 1kg Beef roasting joint, such as topside
  2. 500g Chantenay carrots, peeled and topped
  3. 4 Maris piper potatoes, topped and quartered
  4. 4 Parsnips, peeled, topped and quartered
  5. Few sprigs of thyme
  6. 300ml Red wine
  7. 100ml Beef or chicken stock
  8. 25g Butter
  9. Olive oil
Instructions
  1. Preheat the oven to 200C.
  2. Place a little olive oil in a wide, non-stick ovenproof frying pan or baking tray set over a gas flame. Turn the heat up to high and season the beef all over with salt and pepper. Sear the beef on all sides in the pan until golden in colour. Remove from the pan and set aside on a plate.
  3. Add a little more oil if the pan appears dry and add the vegetables. Leave to caramelise briefly on one side before turning and repeating on the other side. Add the thyme sprigs and arrange the potatoes to act as a trivet for the beef to sit on. Lay the beef on top and place in the oven for 45mins for rare meat, 1hr 15mins for medium and 1hr 30mins for well done.
  4. Wrap the beef in foil once cooked and rest for 20 minutes. Place the roasted vegetables on a plate in a warm place.
  5. For the gravy, deglaze the pan by placing it back onto a high heat and adding the wine. Scrape the base of the pan to release any sediment and intensify the flavour. Reduce the wine by two thirds and add the stock. Reduce until a sauce texture is achieved and whisk in the butter. Season to taste.
  6. Carve the beef into thick slices and serve with the roasted vegetables and red wine gravy.
