Peach, Prosciutto and Mozzarella Salad Recipe. This is a simple and easy salad that’s perfect for an easy lunch or light dinner. A typically Italian inspired arrangement of sweet peach, salty ham and peppery rocket leaves finished with sharp balsamic and soft mozzarella. If you can try and get hold of buffalo mozzarella as it’s the best around.
- 4 Large ripe peaches
- 8 Slices of Prosciutto
- 75g Rocket leaves, washed
- 2 Ball’s of Mozzarella, preferably buffalo
- Balsamic glaze, to dress
- Olive oil, to dress
- Place the rocket leaves into a bowl and drizzle over a little olive oil. Toss the leaves so that each leaf is lightly coated in the oil.
- Divide the rocket onto two plates. Tear the peach into rough pieces, discarding the stone. Arrange the peach slices around each plate and tear over some mozzarella in the same fashion. Garnish with the prosciutto slices and drizzle over the balsamic glaze.
