Chocolate Fondant

Chocolate Fondant seems to crop up in the same category as soufflés in terms of difficulty. In actual fact they are quite straightforward as long as you have a decent clock and chill the mix for at least an hour to ensure a gooey centre. These are ideal to make in advance and bake in the oven whenever you need them.

Ingredients
  1. 170g 70% Dark chocolate, broken into small pieces
  2. 200g Unsalted butter, softened
  3. 170g Light brown sugar
  4. 85g Plain flour
  5. 6 Free-range eggs, beaten
  6. 40g Cocoa powder
  7. Handful of shelled pistachios, lightly crushed
  8. Vanilla ice cream to serve
Instructions
  1. Prepare 4 medium ramekins by using 30g of the softened butter to coat the inside of each one. Ideally use a pastry brush to paint the butter on the inside. It is vital that the entire inside of each ramekin is buttered. Once buttered, pour the cocoa powder into one ramekin and roll the powder around on the inside to coat completely, allow the powder to fall into the next ramekin and continue until all ramekins have a light dusting of powder. Refrigerate.
  2. Place a metal bowl over a pan of simmering water, ensuring the water does not touch the bowl. Dice the remaining butter and add to the bowl along with the chocolate. Stir gently until both have melted. Remove the bowl from the heat and allow to cool slightly until just warm.
  3. Mix the eggs in with the chocolate and then fold in the flour and sugar, mixing gently until no traces of flour remain. Divide the mixture between the ramekins and refrigerate for at least an hour.
  4. Preheat the oven to 180C. Remove the fondants from the fridge and set onto an ovenproof tray. Bake for 15-20 minutes before removing and allowing to cool slightly until warm enough to handle. Invert the fondants onto four plates and garnish with the pistachios and the ice cream. Serve immediately.
