Halloumi with roasted Tomatoes, Peppers and Basil

Vegetarians, this one’s for you! Even meat eaters will enjoy this dish of fried Halloumi with roasted peppers, tomatoes with garlic and basil. Halloumi has to be one of my new favourite ingredients, perfect for grilling as it has the rare quality of being a cheese that doesn’t melt.

Ingredients
  1. 250g Halloumi
  2. 230g Cherry tomatoes, on the vine
  3. 150g Sweetbite peppers, deseeded and sliced into four
  4. 2 Garlic Cloves, peeled and lightly crushed
  5. Handful of basil, chopped
  6. Olive oil
Instructions
  1. Preheat the oven to 200C.
  2. In a baking dish or tray, arrange the tomatoes, peppers and garlic. Season with salt and pepper and dress generously with olive oil. Toss to combine and roast in the oven for 15-20 minutes or until the peppers have begun to darken around the edges. Keep warm.
  3. Slice the halloumi into four large rectangles. Heat a small amount of olive oil in a non-stick frying pan over a high heat. When the oil is hot, add the cheese and fry until golden, turn and fry the other side until golden brown.
  4. Just before serving, toss the basil into the peppers and tomatoes. Arrange on plates and top with the cheese.
