Greek style Chicken Gyros

I have really started to get into Greek and Middle Eastern cuisine. These are a take on traditional Greek Gyros, awesome cooked over a charcoal fire but easy to do under a hot grill at home when it’s raining in the UK. The yoghurt sauce is based on a traditional Tzatziki and goes superbly with the grilled chicken, tangy salad all wrapped up in homemade flatbread.

If you fancy freestyling the salad – go for it! Any combo of tomato, cucumber and crunchy leaves will work just as well.

Chicken
  1. 650g Chicken Breast
  2. 4 tbsp Greek Yogurt
  3. 2 tbsp Olive Oil
  4. 2 tbsp Red Wine Vinegar
  5. 1 tsp Salt
  6. 1 tsp Ground Black Pepper
  7. 1 tbsp Dried Oregano
  8. Juice of a Lemon
Yoghurt sauce
  1. 4 tbsp Greek Yogurt
  2. 1 tbsp Olive Oil
  3. 1 tbsp Red Wine Vinegar
  4. Juice of a Lemon
  5. 1 tsp Salt
  6. 1 tsp Ground Black Pepper
  7. 1 Garlic Clove, peeled and grated
  8. Handful of fresh Dill, chopped
Salad
  1. Handful of fresh parsley
  2. 1 Lemon
  3. Red onion, finely sliced
  4. Olive oil, to dress
Instructions
  1. Cut the chicken into rough dice, around an inch. Mix the remaining ingredients together in a bowl and stir in the chicken. Cover the bowl with cling film and marinate in the fridge for a minimum of 6 hours up to 24 hours.
  2. If using wooden skewers, soak these for an hour prior to cooking. Heat the grill to high and thread 4-6 pieces of chicken per skewer reserving the marinade. Place the skewers under the grill until golden, turn and cook the other side in the same way. Check that the chicken is cooked through by opening a piece ensuring there are no pink bits remaining. Remove the chicken from the skewers and keep warm in a low oven.
  3. Mix together the ingredients for the yoghurt sauce in a bowl and set aside. Dress the red onion and parsley with a squeeze of lemon juice and a little olive oil. Serve with flatbreads.
